India Monsoon Malabar AA holds a unique place in India's specialty coffee segment. The Story of This Special Transaction:
Monsoon Malabar coffee has its origins in the journey of coffee beans transported by sea from India to Europe.
Humidity and sea winds contribute to the ripening of coffee beans. In the past, when wooden ships carried raw coffee from India to Europe, the journey took place during the six-month monsoon months and the coffee beans were constantly exposed to humid conditions, causing the beans to undergo characteristic changes.
When modern transportation methods shortened the duration of this journey, the beans lost their old characteristics.
In the past, coffee beans changed when exposed to sea air, monsoon winds and rain. An alternative process was implemented to replicate these conditions.
Sun-dried coffee beans are divided into "AA" and "A" classes and aged in warehouses until the start of the monsoon rains.
With the onset of moisture-laden monsoon storms, warehouses are opened and humid winds hit the coffee shop, just like in the old days. During this process, coffee beans are constantly screened by hand to prevent fermentation and mold. The process is completed with the classification process.
