Colombia Finca Veracruz

The farm where Finca Veracruz is located was founded in the 1980s by Pedro Echavarria, who wanted to combine the benefits of its unique climate and volcanic soil at the high altitudes of the Andes with his perfectionist approach to coffee farming.

At the Veracruz farm, coffee berries are picked for 5 consecutive days. After the collected coffee fruits are peeled, they are added to fermentation tanks previously cooled to 18 °C. This lower temperature provides a more accurate pH level in the washing process compared to the normal fermentation temperature of 25 / 26 °C, thus aiming for the coffees to develop more complex flavors.

We are happy to share this exciting coffee with you! While roasting this coffee, we tried to highlight the complex taste profile provided by the cold fermentation technique. The result is a vibrant coffee with notes of fruit compote and apple accompanied by the sweetness of dark chocolate.
